  • 16 ounces ricotta cheese
  • 1/2 cup Parmesan cheese grated
  • 1/4 cup butter
  • 4 eggs well-beaten
  • 1 cup flour
  • 1/2 teaspoon salt

Directions

    Mix all ingredients until blended.

    Form a large ball, cut in pieces, roll out and cut into pieces.

    Let set for 1/2 hour.

    Drop into boiling, salted water.

    Let cook until gnocchi float on top.

    Remove with slotted spoon.

    Toss gently with your favorite sauce.
