Ricotta Lemon Pasta

Ingredients
- 1 Tablespoon Olive Oil
- 1 clove Garlic, Minced
- 1 whole Lemon, Juiced
- 15 ounces, weight Ricotta Cheese (whole Milk)
- 1/2 cups White Wine
- 1 cup Chicken Broth
- 1 teaspoon Cayenne Pepper
- 1 pound Spaghetti, Cooked And Drained
Directions

1Swirl the olive oil in a large saute pan over medium high heat.

2Add the garlic and saute until fragrant.

3Turn the heat down to medium and add the ricotta cheese and give it a good whisk.

4Add the rest of the ingredients (except the pasta), whisk until all combined and bring to a slow boil.

5Cover with a lid, but keep an eye on it.

6Simmer for about 5 minutes or so until thickened.

7If its too thin, whisk in a little spoonful of flour and cook a few minutes longer.

8Serve over pasta.
