Ingredients

  • 1 (125) golden pineapple, peeled and cut into 8 - A1/2 slices
  • 1 cup (250) Tre Stelle Extra Smooth Ricotta Cheese
  • 1/2 cup (125) Tre Stelle Mascarpone Cheese
  • 1/4 cup (50) granulated sugar
  • 2 tbsp. (30) candied ginger, cut into tiny cubes
  • 1/4 cup (50) shredded coconut
  • 1 fresh starfruit, sliced for garnish, if desired

Directions

    Chop four pineapple slices into 1/4 cubes and place in a bowl; add Ricotta, Mascarpone, granulated sugar and candied ginger, stir until combined.

    Place each slice of pineapple on individual serving plates; top with a large tablespoonful of mixture and top with equally with shredded coconut.

    Garnish with slices of fresh starfruit if desired Makes 4 servings
