  • 2 lb. all-purpose potatoes
  • 1 can chicken broth or low sodium broth
  • 1 onion, finely chopped
  • 1/2 tsp. thyme
  • 1/4 c. sour cream or low-fat sour cream
  • 1/4 c. grated Parmesan cheese
  • pepper to taste

Directions

    Peel potatoes and shred.

    Bring broth, onion and thyme to a boil in saucepan.

    Stir in potatoes.

    Simmer, covered, stirring frequently, 20 minutes, or until tender.

    Remove from heat.

    Stir in sour cream, Parmesan cheese and pepper.
