- 2 lb. all-purpose potatoes
- 1 can chicken broth or low sodium broth
- 1 onion, finely chopped
- 1/2 tsp. thyme
- 1/4 c. sour cream or low-fat sour cream
- 1/4 c. grated Parmesan cheese
- pepper to taste
Directions

1Peel potatoes and shred.

2Bring broth, onion and thyme to a boil in saucepan.

4Simmer, covered, stirring frequently, 20 minutes, or until tender.
