Ritz Cracker Pecan Pie

- 3 egg whites
- 1 c. sugar
- 20 Ritz crackers
- 3/4 c. pecans, finely chopped
- 1 tsp. vanilla
Directions

1Grease 9 inch pie plate to rim.

2Beat egg whites till stiff. Crush Ritz crackers fine.

3Chop pecans fine.

4Add vanilla, sugar, crackers, and pecans to beaten egg whites.

5Fold all together till blended.

6Pour into pie plate.

7Bake in preheated oven at 300° for 45 minutes; cool.

8Cover cool pie and refrigerate overnight. When ready to serve, top with Cool-Whip.

9This recipe will also make approximately 30 mini tarts.

10Bake tarts for 25 minutes.
