  • 1/2 tsp. baking powder
  • 3 egg whites
  • 1 c. sugar
  • 23 Ritz crackers, crumbled
  • 1/2 to 1 c. pecans
  • 1 tsp. vanilla
  • whipped cream
  • 4 Tbsp. cocoa (instant)

Directions

    Add baking powder to egg whites; beat until stiff.

    Gradually add 1 cup sugar, beating at high speed until sugar dissolves.

    Add Ritz crackers (crumbled with hands).

    Fold them into egg whites. Add chopped pecans and vanilla.

    Pile mixture into a well buttered pie plate (not too near edge).

    Bake 30 minutes at 325°. When completely cool cover with whipped cream and dry instant cocoa.

    Sprinkle with pecans.

    Refrigerate 3 to 4 hours.
