- 4 c. sliced yellow summer squash
- 1 c. chopped onion
- 1 c. chopped green pepper
- 1/4 c. butter or margarine
- 1/2 c. coarsely crushed crackers
- 2 eggs, slightly beaten
- salt and pepper to taste
- 1/2 c. grated Cheddar cheese
Directions

1Place squash, onion and pepper in a colander over a saucepan containing 1-inch of boiling water and steam vegetables, covered, for 10 minutes or until they are tender.

2Transfer with slotted spoon to a bowl and stir in butter, softened crushed crackers, eggs, salt and pepper.

3Transfer mixture to a buttered 1-quart baking dish.

4Sprinkle top with Cheddar cheese.

5Bake in a preheated 375° oven for 45 minutes.
