Riverton Squash Casserole

  • 4 c. sliced yellow summer squash
  • 1 c. chopped onion
  • 1 c. chopped green pepper
  • 1/4 c. butter or margarine
  • 1/2 c. coarsely crushed crackers
  • 2 eggs, slightly beaten
  • salt and pepper to taste
  • 1/2 c. grated Cheddar cheese

Directions

    Place squash, onion and pepper in a colander over a saucepan containing 1-inch of boiling water and steam vegetables, covered, for 10 minutes or until they are tender.

    Transfer with slotted spoon to a bowl and stir in butter, softened crushed crackers, eggs, salt and pepper.

    Transfer mixture to a buttered 1-quart baking dish.

    Sprinkle top with Cheddar cheese.

    Bake in a preheated 375° oven for 45 minutes.
