  • 12 teaspoon allspice
  • 1 cup caster sugar
  • 2 egg yolks
  • 3 drops vanilla extract
  • 1 teaspoon lemon zest
  • 1 teaspoon cinnamon
  • 600 ml milk
  • 12 cup rice, par-boiled

Directions

    Heat the milk to quite hot in a saucepan, add the rice and allspice and allow to simmer for 45 minutes.

    Whisk together the sugar and the egg yolk until well combined and fluffy.

    Add the vanilla and mix well.

    Pour hot milk over yolks and sugar and mix well.

    Return to pot, add lemon zest and continue mixing until rice thickens and becomes lighter in texture.

    Refrigerate until set.

    Sprinkle with cinnamon & serve.
