  • 3 tbsp Oil
  • 2 cup Frozen diced hash browns
  • 1/2 cup Diced peppers and onions (frozen or fresh)
  • 1 cup Leftover roast beef, diced
  • 1 as needed Salt & pepper
  • 1 as needed Other spices to your liking: I used smoked garlic and red pepper flakes

Directions

    Heat oil in a large skillet over medium heat.

    Add potatoes, pepper, & onions.

    Let cook untouched for about 5 minutes.

    Add roast beef.

    Stir and let cook another 5-10 minutes.

    Flipping over gently once or twice for even browning.

    Serve with eggs fixed your way.
