- 2 1/2 lb. pheasant (approximately)
- salt and pepper
- 2 slices bacon over breast of each pheasant
Directions

1Rub goose with salt and place on rack in shallow pan.

2Roast in moderate gas oven (325°) for 25 minutes per pound.

3After goose has roasted about 1 hour, prick skin so fat will run out. Pour off fat as it accumulates.

4If dressing is desired, follow directions for Stuffed Roast Duck.
