- 4 lb. boneless pork loin (double)
- 8 garlic cloves, cut into slivers
- 2 Tbsp. sage
- 2 Tbsp. minced onion
- 2 Tbsp. marjoram
- 1 Tbsp. cumin
- 1 Tbsp. pepper
- 1 Tbsp. salt
- 1/2 Tbsp. cinnamon
Directions

1Preheat oven to 325°.

2Trim all fat from loins.

3Cut small holes in loins.

4Fill with garlic slivers.

5Combine remaining dry ingredients and rub into loins thoroughly.

6Place in shallow roasting pan.

7Do not add water.

8Roast uncovered until thermometer registers 170°, 2 to 2 1/2 hours.

9Allow to cool slightly.

10Slice thin; arrange on platter.
