- One 4-pound pork roast, loin or center cut
- 2 cloves garlic, minced
- Salt and pepper to taste
- 4 bay leaves
- 1/2 cup white vinegar
- 1/2 teaspoon dried thyme
Directions

1Preheat oven to 325 degrees.

2Pierce the roast in several places with a two-pronged fork.

3Force some minced garlic into each hole, again with the aid of the fork.

4Sprinkle liberally with salt and pepper.

5Place the bay leaves in the bottom of the roasting pan.

6Place the roast on top, fat side up.

7Combine vinegar and thyme, and pour evenly over the roast.

8Place in oven, allowing 35 minutes baking time per pound.

9Baste occasionally.
