Roast Shallot Potatoes

  • 1/2 lb. peeled shallots
  • 2 Tbsp. olive oil
  • 2 c. heavy cream
  • 5 potatoes, peeled and sliced to 1/8 inch thickness
  • salt and pepper to taste
  • margarine or butter
  • paprika as desired

Directions

    Oil a shallow baking pan and place shallots in single row. Bake at 350° under tender, approximately 30 minutes.

    Remove from oven and place in blender or food processor until smooth.

    Blend heavy cream into shallots in blender or processor.
