  • 1 tsp. thyme
  • 1 Tbsp. pepper
  • salt
  • 1 celery stalk
  • 1 onion
  • 1 garlic clove
  • 3 slices bacon

    Remove neck and giblets. Mix spices in a bowl and rub mixture inside and on the outside of the turkey.

    coals on the bottom for 20 minutes. Then reduce to 12 coals on top and 10 on the bottom for 1 1/2 hours or longer until done.
