Roasted Butternut Squash

  • 2 large butternut squash
  • 1/4 stick butter
  • fresh ground pepper
  • salt

Directions

    Cut the squash lengthwise. Do not remove the seads. lay cut sides up on a cookie sheet with sides or a jelly roll pan. Put 1/4 inch of water in the pan.

    Bake at 350 degrees for 90 minutes or until tender enough to scoop out of the skin.

    Disgard seeds after baking.

    Scoop flesh out of the skin and put into a mixing bowl.

    Add butter and whip as you would mashed potatoes.

    Salt and pepper to taste.
