- 1 (2 1/2 lb.) roasting chicken
- 1 large onion, finely chopped
- 3 Tbsp. butter
- 12 dried apricots, chopped
- 6 prunes, chopped
- 1 large apple, diced
- 1/4 c. raisins
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 1/4 tsp. cinnamon
- 1 tsp. tarragon
- 1/2 tsp. thyme
Directions

1Wash and prepare chicken for roasting.

2Saute the chopped onions in the butter for 5 minutes.

3Add the dried fruit and saute for 5 minutes.

4Remove from heat.

5Add seasoning and let cool for a few minutes.
