  • 1 12 lbs sweet potatoes, peeled and cut into 1/2 inch cubes
  • 3 cups Brussels sprouts, halved (about 1 lb.)
  • 2 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • 1 teaspoon dried thyme
  • 12 teaspoon salt
  • 14 teaspoon fresh ground black pepper
  • 4 garlic cloves, minced
  • 1 large red onion, peeled and cut into 10 wedges
