- 1 lb fresh green beans, tipped
- 1/4 cup extra virgin olive oil
- 3 garlic cloves, minced
- 3 fresh thyme sprigs, halved
- 3 anchovy fillets, mashed
- 2 -3 teaspoons lemon juice
- 1 lemon, zest of
- salt & pepper
Directions

1Preheat oven to 450 degrees.

2In a large baking dish, toss the green beans with the olive oil, garlic & thyme sprigs.

3Add salt & pepper to taste.

4Spread the green beans in a single layer & roast for about 15 minutes, tossing occasionally, until tender and lightly browned.

5Discard the thyme sprigs & transfer the green beans to a bowl.

6Add the anchovies, lemon juice & lemon zest.

7Toss well to coat.
