- 3 lb. squash (any kind)
- 3 Tbsp. olive ol
- 2 Tbsp. maple syrup
- 1/2 tsp. salt
- 1/2 c. fresh or frozen cranberries
- 1/4 c. sugar
Directions

1Heat oven to 375°.

2Peel squash and cut into 1 1/2-inch chunks.

3In shallow roasting pan, toss squash with oil, maple syrup and salt.

4Arrange in a single layer in pan and roast 35 to 40 minutes, turning every 10 minutes until tender and golden.
