Ingredients
- 2 to 3 large Vidalia onions
- 3 Tbsp. olive oil
- 2 Tbsp. garlic, chopped
- 1 tsp. salt or to taste
- 1/2 tsp. ground black pepper
- 1/2 c. fresh mint
- 1/4 c. balsamic vinegar
Directions

1Remove onion skins and trim ends.

2Cut onions in half from stem to root end.

3In medium bowl, stir together olive oil, garlic, salt, pepper and mint.

4With hands, coat onions with the mixture and place in roaster or shallow dish.

5Bake in preheated 350° oven for 30 minutes.

6Baste with dish juices and continue roasting for another 15 minutes or until onions are soft when pierced.

7Remove from oven; drizzle generously with balsamic vinegar.

8Arrange on platter.

9Serves 4.
