Roasted Pepper Salad

Ingredients
- 2 doz. green peppers, washed (left whole)
- salt
- 1 tsp. chopped fresh parsley
- 1 clove garlic, quartered (to give flavor)
- a little vinegar
Directions

1Heat oven to 400°.

2Place peppers on broiler pan and roast until they turn light brown; keep turning peppers over until brown on all sides.

3When roasted, peel skins off and take out seeds. Cut in strips.

4Place in dish and sprinkle with salt.

5Add parsley, garlic and vinegar.

6Stir and refrigerate at least 1 hour before serving.

7This gives the peppers and flavoring a change to settle.
