Roasted Peppers

Ingredients
- 6 red bell peppers
- 2 or 3 cloves garlic
- pinch of salt
- 1/2 c. olive oil
- 1/2 c. parsley or basil
- toast or Italian bread
Directions

1Place peppers on a greased cookie sheet under a preheated broiler.

2Allow all sides of pepper to get slightly blackened. Remove from broiler and place in a brown paper bag for 10 minutes to steam.

3Remove peppers and peel away the blackened skin. Remove all seeds.

4Slice peppers lengthwise, very thin.

5Place in a bowl.

6Add salt, olive oil, garlic and parsley or basil (but not both).

7Toss.

8Serve on sliced Italian bread or toasted white bread.

9Remove crust and cut into triangles.

10Toast may be made 1 hour before.
