- 4 to 6 baking potatoes (cold water)
- 1/4 c. corn oil
- 1 tsp. sweet basil
- 1 tsp. salt
- 4 Tbsp. dried bread crumbs
- 1/2 c. shredded Mozzarella cheese
Directions

1Peel potatoes and place in cold water.

2Place one potato at a time on a wooden spoon.

3Slice down at 1/2-inch intervals across the potato.

4Return potatoes to cold water.

5Place in baking dish. Combine oil, basil and salt; brush on potatoes.

6Bake at 425° for 45 minutes.

7Sprinkle with bread crumbs and cheese.

8Continue roasting for 10 minutes or until done.
