Roasted Rabbit with Roots

Ingredients

  • 1 1/2 lb rabbit
  • 3 lb red potatoes
  • 1 lb carrots
  • 1 large onion
  • 1/4 cup water
  • 1/4 cup olive oil, extra virgin
  • 1 tsp salt
  • 1/4 tsp ground black pepper
  • 1 tsp rosemary
  • 1 tsp granulated garlic powder
  • 1/3 cup soft butter
  • 1/2 tsp sandlewood
  • 2 tbsp paprika
  • 3 tbsp saffron infused oil, see attached recipe

Directions

    Preheat oven to 400 Fahrenheit

    Cut potatoes and carrots into bite sized pieces.

    Chop the onion.

    Cut the rabbit into 8 pieces

    Put everything into a zip lock bag add butter, sandlewood, paprika, saffron infused oil, olive oil, garlic, rosemary, salt, and pepper.

    Shake and coat.

    Put into an oven safe dish roast for an hour.

    Last 20 minutes add 1/4 cup of water and cover.

    Let sit 7 minutes serve.
