Roasted Rabbit with Roots

Ingredients
- 1 1/2 lb rabbit
- 3 lb red potatoes
- 1 lb carrots
- 1 large onion
- 1/4 cup water
- 1/4 cup olive oil, extra virgin
- 1 tsp salt
- 1/4 tsp ground black pepper
- 1 tsp rosemary
- 1 tsp granulated garlic powder
- 1/3 cup soft butter
- 1/2 tsp sandlewood
- 2 tbsp paprika
- 3 tbsp saffron infused oil, see attached recipe
Directions

1Preheat oven to 400 Fahrenheit

2Cut potatoes and carrots into bite sized pieces.

3Chop the onion.

4Cut the rabbit into 8 pieces

5Put everything into a zip lock bag add butter, sandlewood, paprika, saffron infused oil, olive oil, garlic, rosemary, salt, and pepper.

6Shake and coat.

7Put into an oven safe dish roast for an hour.

8Last 20 minutes add 1/4 cup of water and cover.

9Let sit 7 minutes serve.
