Roasted Red Potatoes

  • 2 lbs. small red potatoes, halved, skins left on
  • 3 Tbsp. olive oil
  • 1/2 tsp. salt
  • 1/2 tsp. ground pepper
  • 1/2 tsp. paprika
  • 1/8 to 1/4 tsp. red pepper flakes (optional)
  • 2 Tbsp. fat free Parmesan cheese

    Preheat oven to 425°.

    Very lightly spray cookie sheet.

    In a small bowl mix together all ingredients except potatoes.

    Put cut potatoes in medium bowl. Mix in oil mixture until all potatoes are coated. Arrange on baking sheet, cut side down. Bake 25 minutes or until potatoes are tender inside and undersides are crusty brown.
