- 2/3 cup roughly chopped pecans
- 3 lbs sweet potatoes cut in large dice
- Salt and pepper
- 2 tbsp veg. Oil
- 4 tbsp unsalted butter
- 3 tbsp maple syrup
- 1/4 tsp cayenne pepper
Directions

1Heat oven to 450

2While oven heats, place pecans on baking sheet to toast until they smell nutty and are slightly darker about 5 min.

3Remove and set aside

4Place sweet potatoes on a baking sheet drizzle with oil. Season well with salt and pepper and toss to coat. Roast until golden brown about 40-45 min.

5Meanwhile melt butter in saucepan over medium heat. When it foams, stir in syrup and cayenne and let cook briefly about 1 min. Serve potatoes with a drizzle of syrup and scattering of pecans
