Roasted Sweet Potatoes

  • 2/3 cup roughly chopped pecans
  • 3 lbs sweet potatoes cut in large dice
  • Salt and pepper
  • 2 tbsp veg. Oil
  • 4 tbsp unsalted butter
  • 3 tbsp maple syrup
  • 1/4 tsp cayenne pepper

    Heat oven to 450

    While oven heats, place pecans on baking sheet to toast until they smell nutty and are slightly darker about 5 min.

    Remove and set aside

    Place sweet potatoes on a baking sheet drizzle with oil. Season well with salt and pepper and toss to coat. Roast until golden brown about 40-45 min.

    Meanwhile melt butter in saucepan over medium heat. When it foams, stir in syrup and cayenne and let cook briefly about 1 min. Serve potatoes with a drizzle of syrup and scattering of pecans
