Roasted Sweet Potatoes and Apples

- 1 tablespoon Dijon mustard
- 1 12 teaspoons brown sugar, packed
- 14 teaspoon ground ginger
- 2 tablespoons olive oil
- 12 cup apple cider
- 1 12 teaspoons fresh rosemary, finely chopped
- 1 bay leaf
- 34 lb sweet potato, peeled and cut into 1-inch cubes (about 2 medium)
- 2 granny smith apples, quartered, cored and cut into thick slices
Directions

1Preheat oven to 350 degrees.

2Coat a 9-by-13-inch baking dish with cooking spray.

3In the baking dish, combine the mustard, brown sugar, ginger, olive oil, cider, rosemary and bay leaf.

4Add the sweet potatoes and apples and stir well to coat.

5Bake for 45 to 50 minutes, or until the apples are golden brown and the sweet potatoes are tender.
