Ingredients
- 12 oz fresh green beans.
- 1 lb. brussel sprouts, trimmed and halved.
- 6 small red potatoes diced.
- 3 tbsp olive oil
- 1 Salt and pepper.
- 1/4 cup shaved parmesam cheese.
Directions

1Drizzle 2 tablespoons of the olive oil over the potatoes, add salt and pepper.

2Toss to coat.

3Place potatoes in a pre heated 425 oven for 15 to 20 minutes.

4(You want them to crisp on the edges a bit)

5Toss the green beans and brussel sprouts with the remaining olive oil and more salt and pepper.

6Once the potatoes are lightly crisped.

7Add the green veggies to the pan and toss.

8Roast another 20 minutes, or longer to get the veggies nicely browned.

9Stir a couple of times to get even roasting.

10Top with the parmesan cheese as soon as you remove them from the oven.
