  • 5 medium potatoes, scrubbed and chopped
  • 2 c. frozen carrots
  • 1 medium sweet onion, chopped
  • 2 green peppers, chopped
  • 2 to 3 stalks celery, chopped
  • 1 to 2 tsp. Mrs. Dash
  • salt and pepper to taste
  • 1 Tbsp. vegetable oil
  • 1 Tbsp. olive oil

Directions

    Place vegetables in Corning dish with cover.

    Sprinkle with Mrs. Dash and small amount of salt and pepper.

    Pour oil over vegetables and toss until all the vegetables are covered.

    Bake at 350° for about 1 hour.
