- 1 lb. green beans
- 1 red pepper
- 1 yellow pepper
- 1 green pepper
- 3 carrots
- 1 sweet potato
- 1/4 - 1/2 c. olive oil
- salt and pepper to taste
Directions

1Preheat oven to 450°.

2Trim asparagus and green beans.

3Cut peppers into strips.

4Pare carrots and sweet potato and cut into bite size pieces.

5Drizzle with olive oil, salt and pepper.

6Bake in large roasting pan, turning occasionally about 30 minutes.
