Roasted Wild Duck

  • 2 mallard duck, plucked and cleaned
  • 2 tbsp butter or margarine
  • 1 cup water
  • 1 tsp ground sage
  • 1 medium onion,half chopped and half sliced
  • 2 cup croutons
  • 4 strips of thick bacon
  • 1/2 cup blush wine
  • 1 lawry's seasoned pepper
  • 1 lawry's seasoned salt

    rub ducks inside and out with seasoned salt and seasoned pepper

    in a large sauce pan melt the butter and 1/2 cup of water
  3. 3
    add ground sage and 1/4 cup chopped onion
  4. 4
    mix with croutons and blend well

    stuff ducks loosely with crouton mixture.

    line bottom of roasting pan with sliced onions.

    place ducks breast up and cover each one with 2 strips of bacon.

    add 1/2 cup water and half cup of wine to bottom of roasting pan

    cover and bake at 300for 2 hours or until tender.
