Roasted Wild Duck

Ingredients
- 2 mallard duck, plucked and cleaned
- 2 tbsp butter or margarine
- 1 cup water
- 1 tsp ground sage
- 1 medium onion,half chopped and half sliced
- 2 cup croutons
- 4 strips of thick bacon
- 1/2 cup blush wine
- 1 lawry's seasoned pepper
- 1 lawry's seasoned salt
Directions

1rub ducks inside and out with seasoned salt and seasoned pepper

2in a large sauce pan melt the butter and 1/2 cup of water

3add ground sage and 1/4 cup chopped onion
-
4mix with croutons and blend well

5stuff ducks loosely with crouton mixture.

6line bottom of roasting pan with sliced onions.

7place ducks breast up and cover each one with 2 strips of bacon.
-
8add 1/2 cup water and half cup of wine to bottom of roasting pan
-
9cover and bake at 300for 2 hours or until tender.
