- 1 cup (225 ml) water
Directions

1Dissolve sugar in water.

2Cook without stirring to 247 - 252 degrees (125 C.).

3Pour syrup into pie pan.

4It should reach a level about 3/4 of an inch above the strings.

5Cover the surface with a piece of foil.

6Watch and wait.
-
7It sometimes takes a week to crystallize.

8Lift the laced pan out.

9Cut the strings and dislodge the rock candy.

10Rinse quickly in cold water and put on racks in a very low oven to dry.
