  • 1 1/2 lb. round steak, pounded thin
  • 1/4 c. chopped onion (scallions)
  • 1/4 c. cubed or ground pork
  • 1/4 c. bread crumbs
  • 1/4 c. grated Romano cheese
  • 1 bunch parsley, chopped
  • 1/2 c. chopped spinach or Swiss chard
  • cold cuts (salami, ham)
  • cheese, cubed (Cheddar, Provolone)
  • 1/2 c. peas
  • 3 hard-cooked eggs, sliced
  • 2 Tbsp. extra virgin olive oil
  • 1 c. chicken broth
  • 3 Tbsp. tomato paste
  • 1/2 c. dry red wine

Directions

    Place round steak on wax paper.

    On it, layer the onions, pork, bread crumbs, Romano cheese, parsley, spinach, cold cuts, cheese, peas and sliced eggs.

    Leave space around edges to allow for rolling.

    Roll steak and tie with string.

    Brown in olive oil. Add chicken broth, tomato paste and wine.

    Simmer on top of stove for 35 minutes.
