Rolled Oats Cake

Ingredients

  • 1 1/2 sticks butter or margarine
  • 1 1/2 c. white sugar
  • 1 1/2 c. brown sugar
  • 3 eggs
  • 2 c. flour
  • 1 1/2 tsp. baking soda
  • 1 1/2 tsp. cinnamon
  • 1 1/2 tsp. salt (optional)
  • 1 1/2 c. oats (Quaker)
  • 2 1/4 c. boiling water

Directions

    Mix butter and sugars, then add eggs.

    Mix together dry ingredients, then add to the butter and sugar mixture.

    Add in water, 1 cup at a time.

    Batter is very thin.

    Pour into 9 x 13-inch pan or two loaf pans.

    Bake in a 375° oven for 45 minutes. May top with coconut and pecan icing.
