  • 1/2 C onion, finely chopped
  • 3/4 C celery, freshly chopped
  • 1 C carrots
  • 2 C soft bread crumbs
  • 1 tbs lemon juice
  • 1 tsp salt - more salt
  • 1/4 tsp pepper
  • 1/4 tsp thyme
  • 4 sole fillets, 18 Sam fillets
  • 1 tbs butter
  • 1tsp lemon juice
  • paprika to taste
  • mozzarella cheese, generous, sliced thinly
