- 1 -2 tablespoon olive oil
- 2 garlic cloves, crushed
- 1 onion, chopped
- 1 -2 carrot, chopped
- 1 stalk celery
- 1 green pepper
- 2/3 cup fresh parsley
- 2 -3 teaspoons basil
- 2 teaspoons oregano
- 2 -3 large tomatoes, coarsely chopped
- salt and pepper
- 2 cups canned red kidney beans
- 5 cups cooked brown rice, cooked with
- 1 teaspoon salt
- 1/2 cup parmesan cheese, grated
Directions

1Heat oil and saute garlic, onion, carrots, celery, green pepper, parsley, and dried herbs until onion is translucent.

2Add tomatoes, salt, and pepper, and beans.

3Combine rice and parmesan cheese.

4Add bean mixture to rice mixture.

5Garnish with more fresh parsley and grated cheese.
