  • 2 (24 ounce) packages Simply Potatoes Traditional Mashed Potatoes
  • 1 lb celery root, peeled, cut into 3/4 inch cubes
  • 1 piece horseradish, 6-inch, peeled, coarsely grated
  • 1 12 cups sour cream
  • 1 (12 ounce) packagechopped spinach, frozen okay, drained

Directions

    Place celery root & horseradish in a pot.

    Add water to cover by 1.

    Bring to a boil, reduce heat to medium-high, and simmer until vegetables are tender, 2025 minutes.

    Drain, reserving 1/2 cup cooking liquid.

    Return vegetables to pot; add sour cream.

    Use a potato masher, coarsely mash vegetables.

    Add Simply Potatoes Traditional Mashed Potatoes & reserved cooking liquid by tablespoonfuls if mash is too stiff.

    Add chopped spinach and mix/stir 1 minute.

    (Re)warm potatoes in the overn, adding more cooking liquid to moisten as needed.

    Mound the mash in a bowl and serve.
