  • 1 sliced potato
  • 1 sliced carrot
  • 1 sliced stalk celery
  • 1 sliced onion
  • 1 sliced yellow squash
  • 1 sliced zucchini
  • 1 small sliced green pepper
  • 1 crushed clove garlic
  • 1 tsp. Italian seasoning
  • 1 peeled, chopped whole tomato
  • salt to taste

Directions

    In a large hot skillet brown potato and carrot in granola oil.

    When slightly tender, add celery and onion.

    When they are slightly tender, add squash, zucchini and green pepper.

    When they are slightly tender, add garlic, Italian seasoning, tomato and salt.

    Cover and cook on medium heat for 1/2 hour.

    The tomato and vegetable juices should form a rich sauce.
