- 3 sprigs rosemary
- 800 g small potatoes, cubed
- 3 garlic cloves, roughly chopped
- 5 tablespoons olive oil
- salt and pepper
Directions

1Preheat oven to 200°C or 400°F.

2Brush a large baking dish with oil .

3Remove the leaves from the rosemary sprigs, discard the stems, chop roughly. Set aside.

4Place a layer of potatoes in the baking dish. Sprinkle over a little of the garlic and rosemary. Season with some salt and pepper.

5Repeat adding potatoes and seasoning.

6Drizzle over the oil.

7Bake, stirring frequently for 45 minutes to one hour, or until the potatoes are tender and lightly browned.
