Ingredients

  • 1/2 lb. pinto beans
  • 1 lb. green peppers, chopped
  • 2 cloves garlic, crushed
  • 1/2 c. parsley, chopped
  • 2 1/2 lb. lean ground chuck
  • 1 1/2 tsp. pepper
  • 1/3 c. chili powder
  • 5 c. canned tomatoes
  • 1 1/2 lb. onion, chopped
  • 1 1/2 Tbsp. salad oil
  • 1/2 c. butter, melted
  • 1 lb. lean ground pork
  • 1 1/2 tsp. cumin seed
  • 2 Tbsp. salt (1 Tbsp. is better)

Directions

    Soak beans overnight in water 2-inches above the beans. Simmer beans in same water until tender, 1 hour.

    Add tomatoes and simmer 5 minutes.

    Saute pepper, onion and garlic in oil until tender, but not browned.

    Remove vegetables and set aside.

    Add parsley.
