- 6 large potatoes
- 4 Tbsp. vegetable oil
- 2 large onions, sliced
- 4 cloves garlic, minced
- salt and pepper
- 4 to 5 green onions, chopped
Directions

1Cook potatoes until tender in boiling salted water to cover. Drain potatoes; let cool.

2Peel potatoes, and cut into 1/2-inch cubes.

3Heat oil in heavy skillet; add potatoes, onions and garlic.

4Season to taste; fry until golden brown, turning to brown on all sides.

5Sprinkle with green onions.

6Yield: 6 servings.
