- 1 1/2 lb. unpared eggplant, pared
- 3 medium onions, chopped
- 2 Tbsp. butter
- 2 egg yolks, beaten
- 1/2 c. grated Parmesan cheese
- 1 tsp. salt
- 1 c. dry bread crumbs
Directions

1Cook eggplant (covered) in boiling water about 10 minutes. Drain. Add remaining ingredients and pour into a greased casserole dish. Bake at 350° for 30 minutes or until brown. Serves 6.
