  • 1 1/2 lb. unpared eggplant, pared
  • 3 medium onions, chopped
  • 2 Tbsp. butter
  • 2 egg yolks, beaten
  • 1/2 c. grated Parmesan cheese
  • 1 tsp. salt
  • 1 c. dry bread crumbs

Directions

    Cook eggplant (covered) in boiling water about 10 minutes. Drain. Add remaining ingredients and pour into a greased casserole dish. Bake at 350° for 30 minutes or until brown. Serves 6.
