- 1 c. rice
- 1 tbsp. butter
- 1/8 tsp. powdered saffron or saffron threads
- 1 small chopped onion
- 1 Tbsp. olive oil
- 1 c. chicken broth or bouillon
Directions

1Mix saffron with heated chicken broth and let sit. In heavy skillet, heat olive oil and butter on medium heat.

2Add chopped onion and cook until onion is translucent (don't burn).

3Add rice. Stir to coat rice with oil and butter. Add broth.

4Cover pan and simmer for about 20 minutes or until all liquid is absorbed.
