  • 1 lb. pork sausage
  • 4 large loaves bread
  • 4 to 5 c. celery
  • 2 to 2 1/2 c. onions
  • 4 to 6 eggs
  • 6 to 8 Tbsp. sage
  • salt to taste
  • pepper
  • 1 Tbsp. thyme
  • 1 tsp. Italian seasoning
  • 3 to 4 lb. skirt steak
  • large can pineapple juice
  • large bottle Italian salad dressing (not light)
  • 1 tsp. oregano
  • 1 tsp. crushed coriander seed
  • 1/2 tsp. cumin
  • 1/4 tsp. garlic powder
  • onion and bell pepper strips, sauteed

Directions

    Cut skirt steak into strips.

    Marinate in glass dish for 24 hours in pineapple juice.

    Stir once or twice while marinating. Discard pineapple juice.

    Marinate 24 hours in glass dish in Italian dressing.

    Reserve dressing.

    Drain.

    Sprinkle with garlic powder, oregano, coriander seed and cumin.
