Salad Dumplings

  • 4 tablespoons fruit vinegar
  • 2 teaspoons dijon mustard
  • 1 tablespoon honey
  • 3 tablespoons sunflower oil
  • 1/4 bunch chives finely chopped
  • 1 red onion small, peeled and diced
  • 3 1/2 ounces bacon sliced
  • 1 leek trimmed, washed and sliced
  • 1 pound dumplings frozen mini
  • 5 1/2 ounces butter lettuce washed, torn into small pieces

Directions

    Whisk together vinegar, mustard and honey and season to taste. Add 2 tbsp oil in a trickle, while stirring. Whisk chives and onion into the dressing. Saute bacon in a dry pan for 5 mins, then drain on paper towels. Saute leeks for 5 mins in the bacon fat.

    Cook dumplings according to package instructions. Heat 1 tbsp oil in a pan and fry dumplings for 5 mins. Season to taste. To serve, arrange dumplings, lettuce, bacon and leeks on 4 plates and drizzle with the dressing.
