Salami Soup

  • 1 c. chopped onions
  • 1 c. chopped celery
  • 1 c. thinly sliced carrots
  • 1/2 stick butter or margarine
  • 1/4 lb. Genoa salami, cut into small pieces
  • 1/2 head (medium) cabbage, sliced
  • 1 large can (49 1/2 oz.) chicken broth

Directions

    Saute onion, celery and carrots in butter for about 5 to 7 minutes.

    Add salami and continue to saute for another 5 minutes. Add cabbage to mixture and saute 5 minutes more.

    Add chicken broth to pot and simmer for 1 hour.
