- 1 lb. salmon filets
- 2 Tbsp. olive oil
- 1 Tbsp. butter
- 1 tsp. garlic, chopped
- 2 Tbsp. capers
- 1/4 c. white wine
- 1/4 c. heavy cream
- 1 Tbsp. fresh parsley
- salt and pepper to taste
Directions

1In a large saute pan over medium-high heat, add butter and olive oil.

2Once butter and oil are heated, add salmon.

3Saute for 8 minutes, turning salmon over every 2 minutes. Next add garlic, capers, wine and cream. Bring to a simmer and let simmer for 4 minutes.

4Add parsley, salt and pepper. Serve.

5Yield: 4 servings, 4 ounces each.
