Salmon Cakes

- 1 (16 oz.) can pink salmon
- 2 slices white bread, toasted
- 1 egg
- 2 Tbsp. oil
Directions

1Open can of salmon and drain liquid into bowl.

2Toast the bread; crumble into liquid.

3Stir so all liquid is soaked up.

4Add the egg and the salmon.

5Flake salmon with fork and mix all ingredients.

6Put the oil in a pan.

7Shape salmon mixture into patties (about a heaping tablespoonful).

8You can just put in pan and press with spoon to flatten a bit.

9Fry in medium heat until brown; turn and brown other side.

10Add more oil if needed.

11Serve with baked potato or macaroni and cheese and salad or fresh sliced tomato.
