  • 1 large can salmon
  • 1/4 c. milk
  • 1 c. dry bread crumbs
  • 1 egg
  • shortening
  • 1 Tbsp. onion, chopped
  • 1 Tbsp. green pepper, chopped fine
  • 1/2 tsp. salt
  • 1/2 tsp. black pepper

Directions

    Put salmon in bowl, flake and remove bones.

    Beat egg. Combine with milk, crumbs and other ingredients.

    Add to salmon. Mix well.

    Shape into 6 cakes.

    Place in hot shortening over medium heat and brown on both sides.

    Serve with tartar sauce, if desired.

    These may also be baked at 350° for 35 to 40 minutes.
