Ingredients
- 1 can (14 1/2 oz.) pink salmon, not drained
- 1/3 c. water
- 1 Tbsp. instant minced onion
- 3 Tbsp. vegetable oil
- 1 1/2 c. instant potatoes
- 1/4 c. mayonnaise
- 1/2 c. packaged seasoned dry bread crumbs
Directions

1Mash salmon.

2Stir in potatoes, water, mayonnaise and onion until blended.

3Divide mixture into 8 portions and form into patties.

4Coat with bread crumbs.

5Heat 1 tablespoon oil in a large skillet until hot, but not smoking.

6Fry patties in 2 batches 3 minutes per side until golden brown, adding more oil as needed.

7Serve with tartar sauce.

8Makes 4 servings.
